Deliberately low yields, with meticulous selection of exclusively hand-picked grapes. Cold maceration ('cold soak') followed by a slow, gentle fermentation. Subsequent maturation for around 18 months in first- and second-use French oak barrels.
Deep purple. Lots of black fruit complemented by fine oak-toasted coffee notes. Tremendous tension culminating in a long and fresh finish. Drinking pleasure and ageing potential in perfect combination.
Vines aged over 100 years in some cases, situated at elevations of between 500 and 700 metres. Careful, judicious farming on meagre soils to achieve optimum quality.
