Hand-picked and hand-selected grapes underwent an eight-hour cold maceration ('cold soak'). After being pressed gently and slowly, the juice was fermented in temperature-controlled stainless steel, where it also then spent 10 months on the gross lees without any bâtonnage (lees stirring).
This year's Schäwer Riesling GG has grapefruit and rose scents on the nose. Nice zip and urgency on the palate. Pure, stimulating and sprightly. The acidity is racy and has a minerally, slightly herbal character.
