Hand-picked and hand-selected grapes underwent an eight-hour cold maceration ('cold soak'). After being pressed gently and slowly, the juice was fermented in temperature-controlled stainless steel, where it also then spent 10 months on the gross lees without any bâtonnage (lees stirring).
Intense and very fresh on the nose, with lime and herbal notes. Noticeable minerality on the palate. Lovely tension-building mouthfeel. Ripe fruit on the finish.
