Selective manual harvest of overripe grapes. Gentle pressing followed by fermentation in temperature-controlled stainless steel. Long maturation on the fine lees to lend extra suppleness, texture and complexity.
Enormous depth on the nose, with pronounced notes of ripe exotic fruit and spice. Beautiful texture on the palate. Mild and supple, with nuanced minerality.
The weathered Devonian slate terroir of this steeply sloping vineyard offers ideal conditions for growing grapes thanks to its south-south-westerly aspect and gradients of up to 70 degrees.
